One of the best things about camping in your rental RV is that you get the best of two worlds – you get to enjoy the luxuries and conveniences of home, but are still able to “rough it” a bit once you set up camp. This pairing of luxury and roughing it is best seen at mealtimes, when you can cook up gourmet camping meals over a rustic, open fire.

And they are so simple to make, even kids or those who have never cooked over a campfire before can help in the preparation.
 

Campfire Cones


Chocolate chips, peanut butter, mini marshmallows and bananas. What else do you need for perfect happiness? This quick-and-easy dessert is sure to create a stir around the campfire with the kids, especially because they can help with the preparation. But adults will be just as happy to dive in, too. 

To create these gooey camping masterpieces, use ordinary sugar cones as the base. Spread peanut butter inside each cone, and then fill to the brim with chocolate chips, marshmallows and sliced bananas. Wrap the whole thing entirely in foil, and place on the grill or over hot coals for 5-10 minutes, turning every so often for consistent cooking. Once you peak inside the foil to see that everything’s gooey — it’s dessert time! These s’more upgrades are easy to eat because the cone holds everything in.

You can also customize these cones to everyone’s individual candy preferences by bringing up other stuffing options, like M&Ms or mini Reese’s Peanut Butter Cups.

 

Orange Brownies


Slightly more complicated than the Campfire Cones (but just as tasty) are these delicious citrus and chocolate bombshells, perfect for making at the end of the evening when the fire has burned down to hot coals. The simple recipe calls for just two items: brownie mix and fresh oranges. It’s not quite as kid-friendly as the last recipe, since some slicing with a sharp knife is necessary. But following that initial prep work, the little ones can help fill the oranges and monitor the baking process.

To get started, simply slice off part of the bottom of each orange so they can sit upright without rolling around. Then slice off the top (saving the sliced-off “lid” for later) and scoop out the pulp to create a small cup. While you’re slicing the oranges, have someone mix up the brownie ingredients (the mixes where you only need to add water are the most convenient for campouts). Then fill each orange with batter to about three-fourths full and place the orange lid that you sliced off earlier back on top. Wrap each orange in foil, making sure to use a large piece of foil so you can create a little handle with the excess. Place the foiled oranges among the coals for 5-10 minutes. You can check one orange midway to see if the batter has firmed up. Once ready, use a spoon to scoop out the chocolaty goodness, enjoying the hint of orange citrus flavor.

Chocolate-covered bacon


Did someone say bacon? What camping trip would be complete without thick, juicy bacon cooked over blazing fire on a cool, crisp morning after a comfortable night’s rest in your RV rental? Many camping enthusiasts will say that mornings are often the best part of the outdoor eating experience. There’s a special satisfaction that comes with enjoying a delicious breakfast in the great outdoors. And what could be more satisfying than bacon smothered in delicious chocolate, all accompanied with a hot cup of campground coffee?

To create this sweet and savory morning treat, simply line the bottom of a wrought iron camp skillet (the bigger the better to fit more bacon) and place right on the hot coals or a grill. Add just enough water to cover the bacon completely and then wait for the water to boil. In a separate, small saucepan, boil some water. Place broken pieces of dark chocolate in a small, zipped plastic bag. Once the water in the sauce pan has boiled, place the plastic bag of chocolate in the hot water to allow the chocolate to melt. When the bacon is cooked to your liking, place the slices on a plate and cover with the melted chocolate. Let the chocolate dry and solidify on the bacon – and enjoy! It may look like a mess, but your fellow campers will love it.
